In the last half of September, students took the nationally-recognized food manager exam. Upon passing the exam, students receive their food manager license, making them desirable candidates as employees within the food service industry. They also began learning about moist heat and dry heat cooking methods. For example, to learn how to steam, students prepared steamed Asian dumplings filled with pork, cabbage, onion, garlic, ginger, and scallions. To learn to poach, students made yam hash consisting of yams, russet potatoes, carrots, bacon, and garlic, topped with a poached egg. In the first half of October, students will continue to practice cooking methods by preparing a wide variety of foods. Also, students will learn about vegetable cookery.
